Couscous Carnival Tabbouleh

In a pot, bring 1 cup water with salt to a boil and stir in the couscous.

Cover and remove from heat, letting stand for approximately 5 minutes.

Fluff with fork.

In as separate bowl, mix the dressing: remaining oil salt & vinegar.

Add chopped tomato, cucumber and onion, including the chopped fresh coriander, to couscous, as season with the dressing until well combined.

Capers are one of the highest plant sources of flavonoid compounds rutin (or rutoside) and quercetin. Rutin are known to strengthen capillaries and inhibits platelet clump formation in blood vessels. On the other hand, it is said that quercetin has anti-bacterial, anti-carcinogenic, analgesic, and anti-inflammatory properties.
